Balsamic Braised Bison Short Ribs
Olive oil for cooking, 2 Lbs bison short ribs , salt and pepper, 1 small onion chopped, 1 carrot chopped, 1 celery stalk chopped, 4 garlic cloves crushed, ¼ tsp thyme, ¼ cup balsamic vinegar, 1 cup red wine, 1 glass red wine to enjoy while cooking, 1 cup beef stock
Directions Heat a drizzle of oil in a heavy skillet or oven-proof pot set over medium-high heat (I used Pampered Chef RockCrok). Season the ribs with salt and pepper and brown on all sides; set aside. Add the onion, carrot and celery to the pan and cook for a few minutes, until they start to soften and loosen any browned bits from the bottom of the pan. Add the garlic and thyme and cook for another minute. Pour in the balsamic vinegar and cook for a minute, scraping up the browned bits from the bottom of the pan. Pour the wine overtop, and add enough stock to come about halfway up the sides of the ribs.
Sweet and Sour Meatballs
1 ¼ Ground Bison, ½ cup dry breadcrumbs, ½ cup milk, Dash of salt and Pepper Sauce: 2 cups brown sugar, 3 Tbsp all-purpose flour, ½ cup vinegar, ¼ cup water, 2 Tbsp Worcestershire sauce, 1 Tbsp ketchup
Directions Mix in large bowl and roll into meatballs. Put onto tray in a pre-heated 350 oven for approx.. 35 min or until brown. Combine brown sugar and flour in a pan, mix well, add vinegar, water, Worcestershire and ketchup; stir and put on stove and keep stirring until it starts to boil. Pour over cooked meatballs, cover and put in 350 oven for 45 minutes.
Bison Pot Roast
3lbs Bison Roast, 3 Cups thinly sliced onions, 1 Cup thinly sliced carrots, 3 Cloves minced garlic, 1 Cup Beer or apple cider, 2lbs Potatoes chopped, 2 Tbsp Olive Oil, 1 tsp salt, ½ tsp pepper, 1 tsp Ground Thyme, ¼ cup Flour
Directions Heat oil in skillet over medium heat and brown roast on all sides. Remove to Dutch oven or crock pot and sprinkle with potatoes. Add onions and garlic to a skillet cooking until soft. Stir in flour , beer or cider, salt, pepper and thyme until blended. Bring to a boil. Pour over roast. If using a Dutch oven cover tightly and simmer 2 ½ hours. And if you using a Crock Pot set on low and cook for 8 hours or until the roast is fork tender.
Zesty Pulled Bison
4lbs Bison Roast, 2 Tbsp Olive Oil, 2-3 Medium Onions chopped, 2 tsp each salt and pepper, ½ tsp Paprika, ½ cup Water, 2 Garlic Cloves, minced 3 Tbsp Brown Sugar, ¼ cup Lemon Juice, ¼ cup Vinegar, 1 Tbsp Worcestershire Sauce Tabasco to your taste, 1 cup Tomato Sauce, ½ tsp Dry Mustard
Directions Sear roast in large skillet with Olive Oil. Place roast in large Crock Pot on low temp. Add chopped onions, to skillet and cook until transparent. Add to Crock Pot Mix together all remaining ingredients and pour over meat. Cook 8-9 hrs on low. Remove roast and shred with a fork and return to Crock Pot. Serve on Kaiser Rolls.
Gourmet Bison Burgers
2 lbs ground bison, 2 Cloves garlic, 3 Tbsp Ketchup, 1 onion finely diced, 1 Lg Carrot grated, 1 Lg Egg, 1 raw potato, grated, 1 ½ tsp salt, ½ tsp each rosemary, thyme and oregano, ¼ tsp pepper
Directions Place all ingredients in a bowl and mix together well. Form into bison patties. The absolutely safest way to cook ground meat is to cook it to well done - an internal temperature of 160 degrees F.
Canadian Classic Bison Meatloaf
3 slices fresh bread crumbled, 2/3 cup Milk, 2 eggs, 1 tsp salt, ¼ tsp pepper Mix and set aside while you get the meat ready 1 ½ Lbs ground Bison 1 small onion chopped ½ cup shredded carrots ½ cup shredded cheese
Directions Blend everything together and put into 9x5 loaf pan ¼ cup Brown Sugar ¼ cup ketchup 1 tbsp prepared mustard Mix and spread on top of loaf Bake at 350 for 1 hour
