Best Bison Meatballs EVER!

In an effort to give you some meal inspiration as we come into some gloomier days and with winter sports in full swing. I will be doing a series of "how to" blogs with pictures and recipes. This first recipe is one I get asked for often and is very, very versatile! A crowd favorite - MEATBALLS and what's better is they are obviously made with our 100% Grass fed Big Rock Bison

So here's the scoop. I usually don't measure, no particular reason other than it usually works out and I don't have to dirty more dishes! Haha. But this time I did just so I could give you at least an idea of amounts

3lb Big Rock Bison
3 Eggs
1 Cup Seasoned Panko
1 Cup Seasoned Bread Crumbs
1 Cup Shredded Parm Cheese
2 Tbsp Steak Spice (Montreal)
1 Tbsp minced Garlic (Epicure)
2 Tbsp Minced Onion (Epicure)
1 Tbsp BBQ seasoning (Epicure)
1 `1/2 Tbsp Big Burger Sauce Spice Mix (Epicure) or you could sub in any other favorite spice. This was Ellies pick as our "secret ingredient"
A few Shakes Worcestershire Sauce
2 Tbsp Dijon Mustard
1 heaping Tbsp Horseradish

Mix well in a very large bowl and start to form into your preference sized balls. I cooked mine on a combination of parchment lined baking sheet and Pampered Chef stone wear. They turned out just the same. Bake in a pre heated 350 oven for 20 min. You don't want to over cook if possible as they will dry out seeing as the Bison is no naturally lean.

 

This made approx. 125 small meatballs which we had with spaghetti and tomato sauce.

I put 2 ziplock bags full in the freezer to use for other meals/apps. I will be sharing soon other uses for these extra frozen meatballs so keep them handy!!

Also if you were on a bit of a mission to fill the freezer because you have a lot of chaotic family stuff coming up feel free to double the recipe or even just add one extra lb. Just adjust your ingredients to taste -  mostly make sure you add 1 egg for every lb of bison.
